La Monferrina P12 pasta-making machine (extruder)
Art.: GD-020226 La-MonferrinaThe P12 extruder is an automatic and reliable machine. It can knead any type of flour and produce both long and short pasta shapes, thanks to the quick change of the die. An attachment for producing ravioli can be fitted to the machine. This is a low- to medium-capacity machine. It is suitable for restaurants and shops selling fresh pasta.
The press is easy to operate and made entirely of stainless steel; it is fitted with a control panel in accordance with current safety regulations.
Scope of supply:
- 4 bronze dies (to be selected from the catalogue);
- 2 dough mixers;
- one pasta sieve;
- an electric cutter for short-cut pasta with adjustable speed;
- a fan (for drying the pasta);
- a press trolley made of stainless steel, on wheels;
- water cooling

How it works
The kneading tank mixes flour or semolina with liquid; the screw feeds the dough to the extrusion head with the die, an automatic variable-speed cutter cuts short pasta and a fan dries its surface. Long or short pasta is made by changing the die. Shaft and screw come apart for cleaning and maintenance. A bronze die gives a rougher pasta surface, a die with PTFE inserts a smooth, glossy one.
Interchangeable units and options
Optional: Multipasta, ravioli unit (17.8 kg, 300×550×370 mm), gnocchi unit (22.2 kg, 250×360×465 mm); bronze dies or dies with PTFE inserts, sheet die 100–170 mm, ribbon pasta 1.8–25 mm wide (die table: manufacturer's die catalogue).
