Recipe and technological card

A batch recipe for jam, compote, nectar or tomato paste by Brix and a technological card with operation regimes: print and CSV.

What the calculator computes

Choose a product — jam, compote, nectar or tomato paste — and a few batch parameters: size, fruit and finished product Brix, sugar, container. The calculator builds the recipe from the dry-matter material balance: how much raw material, sugar, water, pectin and acid you need and how much water to evaporate.

Alongside is a technological card with operations, typical regimes (temperature, time) and control points. The card can be printed or exported to CSV. The regimes are typical and are approved by the technologist.

Calculation example

Jam: 500 kg batch, 65 °Bx

Input data

Product
Джем, конфітюр
Finished product Brix
65 °Bx

Result

Finished product calculation
500 kg
Raw material to buy calculation
422 kg
Water to evaporate calculation
149 kg
Containers, pcs calculation
1,250 pcs

Indicative calculation based on a material balance.

The calculations are approximate: they help to assess the process and compare options, but do not replace a process design and trials on a specific raw material. This section is for reference only and contains no commercial offers.
