Must fermentation simulator

Fermentation of white, rosé and red wine in a tank: sugar, alcohol, temperature, CO₂, heat release and the cooling required.

What the calculator computes

An animated fermentation tank: CO₂ bubbles, foam, an airlock, a cooling jacket and gauges. The curve shows sugar falling, alcohol rising and the temperature changing; the time slider and the cursor over the curve rewind the fermentation, and the temperature setpoint can be dragged right on the tank.

Set the volume, must sugar content, nitrogen, yeast, temperature setpoint and cooling power — you get the time to dryness, alcohol strength, residual sugar, maximum temperature, peak heat release, CO₂ and cooling energy, and warnings about stalling and overheating. The model is indicative.

Calculation example

White wine: 50 hl tank, 21 °Bx, 16 °C

Input data

Wine type

50 hl
Must sugar content
21 °Bx
Temperature setpoint
16 °C

Result

Time to dryness calculation
17.4 days
Alcohol strength calculation
13.5 % vol.
Residual sugar calculation
1.2 g/L
Max. temperature calculation
16.3 °C
Peak heat release calculation
1 kW

Approximate simulation using a simplified model.

The calculations are approximate: they help to assess the process and compare options, but do not replace a process design and trials on a specific raw material. This section is for reference only and contains no commercial offers.
