Calculation example
- What you need
- Raise the acidity (add tartaric acid)
- Volume of wine or must
- 1 000 l
- Acidity now (as tartaric)
- 4,80 g/L
- Required acidity
- 6 g/L
- Total to add
- 1,20 kg
- That is per 1 L
- 1,20 g/L
- Change in acidity
- 1,20 g/L
To raise the titratable acidity of 1000 L of wine from 4.8 to 6.0 g/L you need to add 1.2 g/L, that is 1.2 kg of tartaric acid.
Approximate calculation using a simplified model: for designing equipment and process modes, consult a technologist.
How to add the acid?
The acid is dissolved in a small amount of wine and added during racking or stirring; then the acidity is measured again.
The calculations are approximate: they help to assess the process and compare options, but do not replace a process design and trials on a specific raw material. This section is for reference only and contains no commercial offers.
