How much sugar to add to a tart juice to raise Brix

Tart juices (cherry, currant) are often sweetened. The calculator shows the new Brix and acidity after adding sugar.

Frequently asked questions

Does sugar change acidity?
The amount of acid stays the same, but the mass of the blend grows so acidity in percent drops slightly.

The calculations are approximate: they help to assess the process and compare options, but do not replace a process design and trials on a specific raw material. This section is for reference only and contains no commercial offers.
