Diluting juice with water: what happens to the acidity

If 1000 kg of 30 °Bx concentrated juice with an acidity of 1.5 g/100 g is diluted with 1000 kg of water, the Brix and acidity are halved, while the Brix/acidity ratio does not change.

Frequently asked questions

Does the Brix/acidity ratio change on dilution?
No: water dilutes sugar and acid equally, so the ratio stays the same.

The calculations are approximate: they help to assess the process and compare options, but do not replace a process design and trials on a specific raw material. This section is for reference only and contains no commercial offers.
