Sulphiting 2000 L of red wine: how much metabisulphite

Red wine has a higher pH so more free SO₂ is needed for protection. The calculator gives the potassium metabisulphite dose for your data.

Frequently asked questions

Why does pH affect the SO₂ needed?
The molecular form of SO₂ protects and its share falls as pH rises so at high pH more free SO₂ is needed.

The calculations are approximate: they help to assess the process and compare options, but do not replace a process design and trials on a specific raw material. This section is for reference only and contains no commercial offers.
