Calculation example
- Mode
- PU by temperature and time
- Temperature (stage 1)
- 60 °C
- Holding time (stage 1)
- 15 min
- Pasteurization units accumulated
- 15,0 PU
- PU per minute at the stage 1 temperature
- 1 PU/min
One minute at 60 °C is one pasteurization unit (1 PU). So 15 minutes at 60 °C give 15 PU. For other temperatures the calculator applies an exponential relationship.
Approximate calculation using a simplified model: for designing equipment and process modes, consult a technologist.
What is a PU?
Pasteurization unit: 1 PU = 1 minute of holding at 60 °C. Each 1 °C higher gives 1.393 times more PU per minute.
The calculations are approximate: they help to assess the process and compare options, but do not replace a process design and trials on a specific raw material. This section is for reference only and contains no commercial offers.
